How does not eating meat help our earth?

Everyone is saying to not eat meat for the sake of our earth, but just out of curiousity, how does it help? Just because you don't eat it does not mean the companies stop making it. And if we don't eat it, the meat in the meat markets will rot and be disposed. Either way, animals are being killed.
